Ingredients (8)

  • 1 large corned beef - organic is better
  • 1 head cabbage - cut in quarters
  • 3 large carrots - cut into large bite sizes
  • At least 2 bottles of beer
  • Variety of any more veggies that will fit in a large crock pot - potatoes, turnips, parsnips, horseradish,
  • Large pinch of mustard seeds
  • Large pinch of coriander
  • Fill top of crock pot with stock / boullion

Crock Pot Cooked Corned Beef and Vegetables

I love good corned beef and cabbage, and one year I thought about how I could make it tastier. I’m not a beer drinker, but beer was the only thing I really want my meat cooked in.

Instructions

  1. 1Cut corned beef in a few pices so it will fit in crock pot.
  2. 2Add all the other ingredients.
  3. 3Turn crock pot on medium for about 6 hours. I do this before I go to work–and come home to a great meal.
  4. 4After 6 hours, check for doneness. Add more liquid if needed.
  5. 5Serve with good mustards and horseradish and good rye bread if you want.
