Ingredients (26)

  • 1 package (8oz) cream cheese at room temperature
  • ¼ cup sugar
  • 1 large egg slightly beaten
  • 2 cups all purpose flour
  • 1 ¾ cups sugar
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1 teaspoon salt
  • 1 cup oil
  • 3 eggs lightly beaten
  • 2 cups peeled diced apples
  • 1 cup shredded carrot
  • ½ cup chopped pecans
  • 3 cups apples peeled and sliced
  • 2 tablespoons of margarine
  • ¼ cup brown sugar
  • 1 teaspoon cinnamon
  • 1 cup heavy whipping cream
  • 1 cup brown sugar
  • 2 tablespoons margarine
  • 2 tablespoons Brandy
  • 1 teaspoon vanilla
  • 1 cup heavy whipping cream chilled
  • 1 tablespoon powder sugar
  • 1 teaspoon vanilla
  • 8 chocolate shaped apple candies

Cooked Apple Martinis

Cooked Apple Martinis were born when I needed something to look classey but easy to make using apples. I had a lot of fresh apples and wanted to make something beside a basic apple cake. By adding the cream cheese filling, sauce, cooked apples, and the fresh whipped cream this dessert became a quick family favorite.
A wonderful dessert to complete a nice fall evening dinner.


  1. 1Preheat oven 350 degrees F. Lightly spray 13×9 inch pan with cooking spray. Set aside
  2. 2In a medium bowl mix cream cheese, sugar and egg. Mix until well blended.
  3. 3Combine flour, sugar, baking soda, cinnamon and salt into a large bowl. Add oil and eggs. Beat until well mixed. Fold in apples, carrots and pecans.
  4. 4Pour ½ apple mixture into prepared pan. Next, pour all of cream cheese mixture over apple mixture. Carefully spoon rest of the apple mixture over cream cheese, spreading to cover. Bake 55 minutes or until done. Allow cake to cool.
  5. 5Meanwhile, place apples, margarine, sugar and cinnamon in a medium saucepan. Cook on medium low heat until tender. Stir occasionally. Cook about 15 minutes. Set aside
  6. 6In a large saucepan over medium heat bring whipping cream to a light boil. Stirring occasionally. Add sugar and cook 5-6 minutes or until mixture is smooth. Remove from heat and stir in margarine, Brandy and vanilla. Allow to slightly cool
  7. 7Chill the small bowl and beaters of an electric mixer. Beat the cream in chilled bowl until it begins to thicken and soft peaks form. Add the powdered sugar and vanilla and beat until stiff.
  8. 8Spoon each desired serving of cake into a Martini glass.
    Next, add a serving of cooked apples over cake. Drizzle Sauce over cooked apples and cake. Top with whipped cream and chocolate shaped apple candy.
