This recipe is something I make my little ones. Its easy, healthy and they enjoy it! It is a basic taco/mexican flavored dish that is easy to prepare, appeals to many ages at the table and is fun for the kids because they get to " build their own"

  1. Recipe done all stove top, so no oven temp needed.

Make instant brown rice per instructions ( boiling in water on stove top) and keep covered, set aside.

In a large skillet over Medium-high heat, cook ground turkey until completely cooked throughout and add taco seasoning packet. Lower heat to med-low. Add black beans and jarred salsa to seasoned turkey and stir until ingredients are well combined. Bring to a quick simmer to ensure beans and salsa are hot.

  1. Serve each guest or family member a plate of rice topped with the turkey, bean & salsa mixture. Then have the Monterrey Jack cheese, lettuce, tomato, cilantro and pickled jalapenos arranged on dinner table. Everyone can ‘build’ their plate with each topping they choose.
    Let the fun begin!
