The best Bleu burgers
I came up with this recipe while in culinary school for a dinner party with my friends. These are my friend Bryon’s favorite burgers!
- one pound lean ground beef
- 1 small yellow onion, finely chopped
- 1 shallot, finely minced
- 2 TB worcestershire sauce
- 1 tsp garlic powder
- 1 tsp steak seasoning
- 1 tsp salt
- 8 oz gorgonzola cheese
- 4 slices white cheese of your choice (havarti, provolone, monterey jack)
- 1 cup sliced mushrooms
- half cup port wine
- half onion, julienne
- 2 TB balsamic vinegar
- 2 TB butter
- 4 ciabatta rolls
- 2 TB olive oil (optional black truffle oil)
- salt and pepper to taste
1mix onion, shallot, worcestershire, and seasonings with ground beef. Form 8 thin patties.
2place about 2 TB gorgonzola in the center of 4 patties. Cover each patty with remaining 4 patties to form 4 large hamburgers.
3In a hot pan, brown each hamburger on both sides and place on a cookie sheet. put a slice of cheese on each patty, and place in the oven at 35O degrees for 1O-12 minutes.
4in a separate pan, saute mushrooms in the port wine. season with salt and pepper. cook until mushrooms are soft and liquid has evaporated. set aside.
5in a separate pan, saute sliced onions in butter and balsamic vinegar. season with salt and pepper. cook until onions are soft and carmelized. set aside.
6brush oil onto ciabatta rolls and toast. assemble burgers with stuffed patties, onions, and mushrooms. add your favorite condiment!
