Ingredients

For the Honey Syrup:

  • 2 cups hot water
  • 2 cups honey

For the cocktail:

  • 3/4 ounce lemon juice
  • 3/4 ounce Honey Syrup
  • 2 ounces gin
  • Lemon peel, for garnishing

Instructions

Make the Honey Syrup:
  1. 1Combine the hot water and honey in a large, heat-resistant plastic container. Whisk rapidly until the honey has diluted.
  2. 2Transfer to a containers, cover tightly, and refrigerate.

Assemble the cocktail:

  1. 1In a cocktail shaker, combine the lemon juice, Honey Syrup, and gin.
  2. 2Add ice, shake, and double-strain into a chilled coupe glass.
  3. 3Express the lemon peel over the drink, rim the glass with it, and drop it into the drink.
