The Meatball Shop's Bee's Knees Cocktail

The Bee’s Knees is a new summer cocktail at New York City’s The Meatball Shop. It’s easy and refreshing, and the Honey Syrup balances the tartness of lemon juice and the aromatic bite of the gin. It’s the ultimate drink to whip up for a summer gathering on a Brooklyn rooftop, or as an after-work refresher. The recipe makes more Honey Syrup than you’ll probably need, but any extra will keep in the refrigerator up to 2 weeks.

Instructions

Make the Honey Syrup:
  1. 1Combine the hot water and honey in a large, heat-resistant plastic container. Whisk rapidly until the honey has diluted.
  2. 2Transfer to a containers, cover tightly, and refrigerate.

Assemble the cocktail:

  1. 1In a cocktail shaker, combine the lemon juice, Honey Syrup, and gin.
  2. 2Add ice, shake, and double-strain into a chilled coupe glass.
  3. 3Express the lemon peel over the drink, rim the glass with it, and drop it into the drink.
