The perfect apple pie is simple: a flaky crust, fresh apples, and a few spices are all you need. Here, we call for a mix of shortening and butter in the crust—it yields the ideal tender and flaky results. The apples are a mix of tart Granny Smiths and sweeter, more aromatic Galas or Pink Ladies, and the restrained spicing is a mix of cinnamon and nutmeg, with lemon zest to keep things fresh. If you want, fold in additional spices, the seeds scraped from a vanilla pod, raisins, or even dried cranberries. Serve the pie fresh but, to make it easy to slice, just slightly warmer than room temp. Serve with spoonfuls of Easy Whipped Cream or scoops of Cinnamon Ice Cream.
