This super flexible avocado yogurt dip is light, tangy, and incredibly easy to make, not to mention a lovely shade of pale green. It works perfectly as a dip for crackers and crunchy vegetables in a rainbow assortment of colors, but it can also be adapted to lots of other uses. Thinned with a little water, it’s a Green Goddess salad dressing, or thickened with a bit more yogurt, it’s a great condiment for Greek food. You could even use it as a taco topping with some cotija cheese sprinkled on top.
