1 1/2 cups all-purpose flour
1 Tbs ground ginger
1 tsp baking powder
1/4 tsp salt
1/4 cup chopped candied ginger
1/4 cup diced apple, whatever kind you like best
1 1/4 cup granulated sugar
1/2 cup unsalted butter, room temperature
3 eggs
3/4 cup milk

I made these for a friend at school, he requested the flavors and I had fun with them.
I frosted these with orange clove buttercream, which you can find the recipe for here:

Instructions

1Pre-heat oven to 350, line cupcake pan with paper liners.
2Sift together the flour, ground ginger, baking powder and salt into a small bowl. Stir in the candied ginger and apple.
3In a large bowl, use an electric mixer to beat together butter and sugar until well combined. Add eggs, one at a time, beating after each addition.In a large bowl, use an electric mixer to beat together butter and sugar until well combined. Add eggs, one at a time, beating after each addition.
4Alternately beat in flour mixture and salt, making three additions of flour mixture and two of milk. Beat until smooth.
5Scoop batter into pan(s) and bake 24-26 minutes or until golden brown and top springs back when lightly touched. Cool in pan on wire rack for 10 minutes, then remove from pan and cool completely.
