There's a place on the SWC of Thomas and 32nd called Kim's Dim-sum and Chinese Food. It's really low-brow, takeout / delivery only, but I think they have what you're looking for. Check the Yelp page- there is a picture of the pork fried rice. That was the only dish I liked from there.

The Mission's menu is a bit more limited at lunch, but both the almejas al vapor and brisket torta are available - hard to go wrong with those two dishes.

Possibly Taqueria Guadalajara on 27th Ave / Van Buren. It's not in the menu of Comedor Guadalajara, though they might run it as a special.

I'd also add Teakwoods to this list - lots of tv's, great wings.

Huevos rancheros I believe is one of the dishes we ordered, but it's been at least three years so I can't really recall. I just remember thinking, "most of this stuff is right out of a can". I'll give it a shot again someday soon.

carne asada and eggs at TAYLOR'S? i am very surprised to hear this. i used to be roommates with a girl who worked there for years and i couldn't bear to step foot in that place after a couple of visits. the food was flat-out terrible.

Santa Monica Seafood recently opened a distribution center in the west valley that you can contact for a wholesale account. I called the a few weeks ago and they didn't have things up and running - that is likely not the case anymore. I do not believe they carry escargot.

Have you tried Restaurant Depot for duck breast? European Imports should also be able to get D'Artagnan if that's what you're after. Supermarkets - Super L, Lee Lee. Octopus is dirt cheap @ Ranch Market.

Retail is basically non-existent for these products by-and-large, from what I've found.

correct, there is no one where to buy it in town. i've ordered 6 bottle cases airshipped the last couple of years.

I would recommend Rancho Pinot, Citizen Public House, BLT Steak and Merc Bar. They all have solid talent behind the bar.

I've had a killer manhattan @ Binkley's and Quiessence as well.

I think this is akin to asking why there are so many iterations of Ray's Pizza in NYC....

I'd probably just go eat at the Cafe at MiM. I really liked the food we ate there a few months ago.

when making fresh pasta, it tends to dry out quite fast if you're not quick enough with you're machine

I'd start with Page Springs El Serrano, Arizona Stronghold Dala, or Dos Cabezas El Norte or Toscano.

Correct - Ben the baker took a position with Bouchon / Per Se in NYC.

I think that LGO's version is just fine, although i prefer a version with a mornay sauce draped over the top for maximum indulgence. Hillside Spot serves a similar version, as it's somewhat of a spin-off (though unrelated in ownership).

It does in fact exist - it's north of Chelsea's Kitchen on the west side of 40th St, and is actually set back in a nondescript office building. I haven't been in a couple years, but I found it to be a more than acceptable place for lunch when in the area.

Fresh garlic is not recommended when cooking items sous vide, particularly when doing tougher cuts of meat that require 24+ hours. Granulated garlic is a fine substitute in those cases.

In your searching, keep in mind that Eddie Matney's restaurant mentioned is named "Eddie's House". That said, it's located only a stone's throw from Indian School Rd, and don't know how quiet it actually is as I've only dined inside.

Border (Sonoran) or something further south? Casual or more upscale?

We stopped for cocktails and a few small bites after Devoured.

They were really still getting set up, so I can't say it was a full experience. We did a cheese plate and the chorizo flatbread. The cheese plate was fine, nothing extraordinary - there was a sheep's milk cheese, goat / sheep combo and Valdeon; temps were a bit colder than they should have been. The flatbread was a bit of a disappointment. The chorizo was good, but the green olives kind of overwhelmed and they used romaine lettuce on top as well which didn't add much interest. The crust was of the "cracker" variety.

Three beers on draft - a Lagunitas (pale ale or IPA), something from Bisbee, and I'm forgetting the third. They had several wines b-t-g (including AZ Stronghold Nachise). Cocktails seem to be their strong suit, though they did serve me my rye Manhattan without a cherry (they didn't have any). Again, they were 2-3 days in.

We have dinner plans for next week, so I'll report back.

Right, he's back and forth between The Mission and Zinc Bistro. He recently consulted on the menu for Bonfire Grill, though he's not involved in operations. He's also doing an Italian spot in the old Zen 32 space on 32nd St / Camelback, though I don't know the timeframe on that project.
