FYI, shipping to Seattle for the two tubs was $35 for FedEx 2-day. Ouch. At least it was impeccably packed.

I posted the same query on the NYC board and turned up a hit: Schaller & Weber carries it in the store & they're willing to ship. ($30 min. so I had to buy two 14 oz. tubs at $18 each).

FYI it's not currently on the web site, but from what they tell me the site is a work in progress.

Still, it would be great to know of any local sources who can supply year-round.

Guts, many thanks for responding. Schaller & Weber does indeed carry goose fat & they are willing to ship. It's not currently on their web site, but a guy at the store mentioned the site is still getting some work done. $18 for 14 oz., $30 minimum so I bought two tubs.

You would think with the boom in domestic foie gras there would be a domestic source...

Puzzling to say the least.

 

I live in Seattle, and for some reason no one, not even custom meat shops, are carrying goose fat. Some will carry close to the holidays, but I am seeking a year-round source.

Does anyone know of a source in NYC for goose fat? Duck fat I can get without too much trouble, but goose seems to be a problem.

Even on Amazon, it's not available. I tried calling Zabars (the store, not the online shop) and was completely rebuffed - no they don't carry it, and no they couldn't transfer me to anyone who knew anything about food to suggest where I could find it. (Thanks, Zabar's!)

Any help would be greatly appreciated.

I do not find chicken and duck interchangeable at all. Duck and goose are closer, but still not the same. At least for my cooking.

Hans doesn't have it. The person I spoke with didn't have any suggestions.

Don & Joe was the first place I tried - they don't carry it. I'm thinking about asking them to order it.

I don't mind rendering myself, but buying a pound of rendered fat is a lot cheaper than buying a whole goose, let alone a hunting license and goose stamps.

As for Green Lake geese, I'm not going to go there.

 

Anyone know a good source for buying rendered goose fat? I need it for a couple of dishes I'm cooking.

Duck fat I can easily get, but I am specifically looking for goose fat. Please let me know if you have any leads!

We went for the first time a couple of weeks ago, and our server was not at all up to par for this level of restaurant. Inattentive, not very knowledgeable about the food, and opinionated / self-righteous. Very annoying.

On the other hand, another server who assisted was very warm yet professional, extremely knowledgeable about the food, etc. Same goes for the maitre'd.

I guess we got the weakest link that night.

 

Just like the title says. I've realized that I enjoy good food best when the front of the house is as committed to excellence as the back.

Any nominations for Seattle metro?

I haven't eaten at any of the ones you listed, but if you're looking for reasonably priced, I would suggest:

1. Le Mesturet at 77 rue Richelieu. Think of a classic bistrot with a friendly neighborhood feel, but elevated quality. The prices are some of the best I've seen at this level of cooking.

For example - full menu (first course, main course, dessert) is between 23-28 Euros. I ordered a la carte and had a terrific steak tartare accompanied by a sauce to die for for all of 12 or 14 Euros. The quality of the meat was superb.

2. Liza at 14 rue de Banque for haute Lebanese cuisine. This place is not that cheap - dinner for two was around 65 Euros, BUT - they have a lunch spot next door that doles out excellent Lebanese sandwiches for 5-7 Euros.

3. Stohrer at 51 rue Montorgueil has some of the best croissants and pains aux chocolats in all of Paris. It's an historic landmark and earns its reputation every day with outstanding quality and professional counter service. They have salads and things which you could also make into a wonderful gourmet picnic.

4. Rue Montorgueil in general is a great street for high quality pate, cheese, etc. for dining en suite or for picnics.

My wife & I are really enjoying Lobrano's book for all the reasons John mentioned. It's like having a trusted ex-pat friend show you his favorite spots. I wouldn't want to use it as a sole source, though, so we also have been finding Time Out's eating & drinking volume quite useful. It's smaller, cross-references well with Lobrano, and lists actual prices (the $$, $$$, and $$$$ reviews in Lobrano's book have quite a wide range.)

Other pluses to Time Out - an index by arrondissement, sectioned by French vs. other cuisines, metro stops, decent 0aps, and portable size - this one you can carry around in a coat pocket all day.

Preet's is in Redmond. I wish they were more consistent - when it's good it's good; otherwise kind of meh.

Preet's is an offshoot of Punjab Sweets in Kent, which is much more consistent. They have much of the same vegetarian punjabi menu, but the sweets are the real star. Easily the best Indian sweetshop you will find in the Northwest, better than All-India Sweets in Vancouve BC, and even rivals what I've had in the Southhall area of London.

John Howie Steak is amazing. Not cheap by any means, but truly an experience. Lobster mashed potatoes are to die for!

Their happy hour is a no-brainer - later afternoon & late evening. Where else can you get a Wagyu burger with Kurubota bacon plus fries for $8? (Puts Lunchbox Laboratory to shame.) Go on a weekend around 4pm, sit in the bar, and luxuriate in swank food and relaxed surroundings. You'll swear you've been pampered from head to toe in a day spa. I'm just saying.

Spiced (across from Crossroads Mall) is a true gem. Sichuan cuisine that will numb your tongue and make your forehead sweat. (They do have some good non-spicy options)

Best Dan Dan Noodles in town, IMHO. Big portion, very reasonable price. Boiled fish in chili hot pot is simply incredible. Pretty much everything that comes out of the kitchen is well executed.

 

All too often I see San Pelegrino soft drinks on Italian (and other) menus, but never do I see Chinotto, the bitter citrus drink.

I buy it at Big John's PFI on occasion, but I would really enjoy having it with dinner someplace. I don't drink alcohol and get tired of club soda, tonic, and traditional soda.

Any thoughts?

Seattle is blessed with some great Ethiopian restaurants, but some of my old favorites have not been as good of late as I'd like.

Where are Chowhounds currently going, that would be recommended?

For excellent duck, I recommend Harbor City. They serve steamed buns instead of Peking pancakes, and their buns aren't always so great, but the duck....

FYI this one is not really your banquet-style restaurant by any means.

Here's an update on what they have at Big John's for pizza-making:

- Turns out they have Pendleton Flour Mills' "Power" flour in the bulk bins for 55 cents/lb. (Given the 50 lb. bag is ~$20 at Cash & Carry that's not too shabby). They also have bulk pizza flour from Naples, so if you're making a true Neopolitan you're in good hands.

- They have a single type of fresh mozzarella. Made in NY I think, and comes by the pound (like all Big John's cheeses) or in 3-lb. tubs. Haven't tried it so I can't comment.

- A single offering for pepperoni it seems, couldn't read the brand & again can't comment.

- No shortage of canned Italian tomatoes

Naan N Curry is excellent, esp. for Pakistani dishes (haleem), but their N. Indian dishes are also well above the average in this area.

I agree with Equinoise that Preet's doesn't always deliver; however, Punjab Sweets in Kent absolutely rules. If you're willing to drive to Lacey (near Olympia), Curry Corner is probably the closest we get to London-style curry joints in this area. Definitely worth a stop if you're in the area.
