Just visited my sister in New York and we made bialys from a recipe in from Maggie Glezer's book "Artisan Bread" uses 1 medium onion, pureed in a food processor. Great recipe, the "chew" was just the way I remember from New York. Like Kossar's but better as far as I am concerned.

My recipe had called for ricotta, and I did my trial with the crappy supermarket stuff, LOL.. I did not like the texture. I grew up with ricotta in my lasagne but now I will try to make the same recipe with bechamel. would like a creamier, less lumpy/curdy mouth feel..
I am going to make a large lasagne, which calls for whopping 2 quarts of ricotta. (did a trial run this weekend of a half recipe,not a great texture)
I want to substitute a bechamel for the ricotta. Anyone have a favorite bechamel and proportion hints for subtituing bechamel for ricotta.. Im making a bolognese for the sauce . thanks

I was in heaven... another day, I got tried empanadas from the El Porteno cart. I took those home but perhaps you can get them warm to eat outside...

Read somewhere Roland's has bialys? anyone try them? I miss Kossars but can't afford to ship them to SF.
I moved from NYC years and years ago but everytime I go home to visit, I go to Chinatown to buy a dozen crab from Chinatown. The crab are small and green with orange tipped claws, I believe. The roe is unbelievable. Does anyone know what type of crab this is so I find out whether someone in the San Francisco Bay area gets them shipped to SF? Thanks
Thanks everyone. I will check out Berkeley Bagels and Arizmendi. Ages ago I had a bialys from the House of Bagels in SF. it was okay... I have tried the bialys recipe from the book "Better than Store Bought" that was ...gluten flour, etc...not bad but not Kossar's.... . never tried the recipe from Mimi Sheraton's "the Bialy Eaters"...
