If you don't like Hungry Onion's layout, check out Food Talk Central. It's surprising how different they look given that we're both using the exact same software. I guess that just shows how customizable Discourse is.

Food Talk Central uses the same Discourse software as Hungry Onion (and thousands of other discussion sites). I started it in 2015 after some CBS employee banned me from Chowhound for not shutting up about what was wrong with the wood-chipper redesign. They said I violated the rules but that was a lie.

For me, one big plus of Discourse (Hungry Onion's software) over Chowhound is that you can always tell what post someone's replying to.

Which was also the case for the original Chowhound, before CNET took it over. Not that the software was very good, but that part was nice.

Only if moderators tolerate it. One of the big advantages of Discourse is that it automates and crowd-sources a lot of the scut work so that moderators don't have to do much.

Facebook's group software is terrible. They will cancel your account if they figure out it's not your real name.

Discourse is the state of the art. Check out Food Talk Central and Hungry Onion, both use Discourse. We're already paying for the software, you can take advantage of it for free.

Chowhound uses proprietary software. It would be so expensive to take over that Red Ventures probably didn't think it was worth investing the effort to sell it.

I created FTC as an alternative for people that CBS kicked off Chowhound. It eventually got a lot of the people from the LA board.

One nice thing about the Discourse software is that obnoxious posts like that get flagged and removed, often without any need for action by a moderator. So the general tone of discussions is much more civil. Same is true for Hungry Onion, I believe, which got a lot of people from Chowhoud's SF board.

I say "board" but of course after CBS put the site through the wood chipper there were no boards, only tags.

Food Talk Central has a very active Los Angeles board with many former Chowhounds. Its terms of service (you own your own words) are quite different from Hungry Onion's (Creative Commons license). Both use the same software (Discourse).
