I have a nice trout in my fridge and thought about Trout Lappland and went to see if I could find a recipe and ran across your comments. I often wondered if it was just me but the Three Small Rooms is, overall, my favorite restaurant anywhere. I had a table they would always give me...I ate there at least once a week. for years. Loved the little elevator from the hotel lobby and that sci-fi hallway to the restaurant door. Compared to the front entrance, it gave my date a feeling of being taken to a secret place. Sorry to hear that the place has changed...I had considered a trip back. At the time, 1970, I really didn't eat fish but a friend challenged me to sample the Trout Lappland offering to pay if I didn't like it and, wow...I loved it. I usually ate in the Grill but once in The Restaurant at which time I discovered I had a kleptomaniac French-Canadian date...she attempted to steal the silver tableware!
