That sounds amazing! I love baking and my son is getting more and more into it so I may even have a helper this year!
So far I have committed to

Mary's sugar cookies decorated for the school holiday party plus another batch later in the month to leave for Santa

Fudge

Chocolate cookies three ways: with white chocolate chips and macadamia nuts, with roasted hazelnuts and chocolate covered expresso beans, and with almonds and marshmallows

Apple cider caramels

Cinnamon rolls

And cupcakes for our daughter's birthday!

I also like to make my husband and son a batch of chocolate chip cookies Christmas Eve because my son is allergic to nuts and my husband doesn't like sugar cookies!

It took two years of experimenting but it's my husband's favorite cookie so I was determined to get it just right!

Oh and I use a 1 tbsp scoop and flatten then slightly before putting them in the oven.

Good catch! It should say 1/4 tsp salt unter the baking soda!

The problem with baking powder in a flatter cookie is that is is meant to create carbon dioxide once in contact with water and it is meant to do it quickly so it will give you incredibly fluffy pancakes, light moist cakes and prefect biscuits but if you want a flat cookie it will very likely make them pouf up especially if it is fresh!

I use a nordic half sheet with a silocone baking mat.
Try my recipe.
7 tbsp butter, melted
1/2 cup brown sugar
1/4 cup white sugar
1 egg, room temp
1/4 tsp b.soda
1 cup all purpose flour
1 cup chocolate chips

350 degrees for 10 minutes on a parchment lined backing sheet

The two things with these are to make sure none of your ingredients are cold and avoid baking powder in things you dont want to be fluffy.

I make these as a treat for my family every friday and it took me alot of tries but they are exactly what you were looking for which also happens to be my husband's favorite!

Table 16 and Liberty Oak are our favorites. We typically do Liberty oak for lunch though.

 

Pumpkin spice cheesecake, sweetened with pure maple syrup and carefully swirled into a convenient boxed brownie mix, enhanced with a generous spoonful of fresh ground espresso.

I used to love them. Then I cut back on sugar and couldn't stand how sweet they were. Now I made a version at home that tastes more like a coffee but still has those wonderful fall favors!

For thin cookies you actually do not want room temp butter. You want to melt it some right before you use it.
My great grandmother made the best thin cookies and she swore by melting about half the stick first!
