I am starting to think I have imagined the sandwich cookie with the pink frosting inside didn't exist and it is one of those memories that just isn't correct.

LauraKay - YES, like a pink creme? Like the texture of the creme in an Oreo. This was a sandwich cookie if I am remembering it right.

No. I see those all the time. The ones I remember had frosting in the middle.

The one I was thinking of had either pink or yellow frosting inside and was rectangle with ridges? The frosting was like banana or coconut. The outside cookie part was coconut I think so the inside must have been a banana cream. Of course my memory could be way off as memories can be.
