I make some DELISH grilled chicken leg quarters (legs and thighs still connected). So incredibly juicy and delicious. The only thing I don't like is babying the grill for like 40 minutes. I was thinking today. What if I pressure cooked the chicken leg quarters just before being completely done, then brought them over to the grill to char the skin? I'd use less of my precious propane too. Also, when pressure cooking the chicken leg quarters I was thinking of putting them in a basket so that they steam rather than be submerged in some water. Has anyone tried doing this? My dad would always swear by microwaving chicken first before grilling it to cutdown on the cooking time. Microwaves remove moisture, I figure pressure cooking would be ideal to keep all of that moisture inside the chicken before grilling.

Let me know your experience on this.

This recipe is ok, I've had better. He purchases all of these ingredients and he doesn't even use saffron. Get big or go home. You need to have big pockets though to make the meals that I make. Not everyone has the luxury of making as much money as I make. I can understand that. I'll give him the benefit of the doubt and say he put a lot of effort in it though. That certainly counts. I made it exactly as written. It was fun to make though.

 

I found some at shoprite for about $2 for 8 ounces. But I want to buy more than that (a better deal is what I'm hoping for). Ugh, I haven't had them in such a long time. I'm craving them. So good.

What places groceries sell them?

Ugh, I'll try Jan 27-28th. I tried over the weekend and I couldn't find it. I talked with two hispanic guys and both couldn't help me (almost no English ability). I saw an Asian fellow at the checkout line (cashier) and asked him about lime leaves and he had never heard of it. If you have a smartphone you should take a picture of it. I swear I searched everywhere. I'll be amazed if you show me a picture and its right where I was looking. haha!

I come from the rare school of "don't waste anything". It just irks me to throw away food like that. Its ridiculous that they put so many in one container. It is cheap, like $3 for the container but I can't imagine anyone being able to use them all before they go bad. I like making sweet chili sauce with habaneros, maybe I could make it with these thai chili peppers. I can't imagine how hot it will be though. I don't like to suffer when I eat... my girlfriend does that before and after I eat. Its the only time I can be sane. lol.

Really? I go there all the time. I NEVER see it there. Do you know where it was located? I practically have the entire Newark Farmers Market mapped into my brain. Is it on the right side wall with all of the greens? (fruits like Apples, papaya, are to the left of the wall). Or did you go past that wall near the Asian ingredients (where the lemongrass, ginger, and Asian greens are located... near the eggplant and zucchini.. heading towards the fish market section)

Thanks for your replies. I have a local farmers market that has red and green (fresh too!)thai bird eye chilies. The only problem is that they give you like 50 of them in a package. I can't ever imagine using all of them by the time they go bad and get moldy. I'd probably end up making some sort of sauce out of it and jar it.

Good to know! I'm a bit scared of those chilies though. I like habaneros because to me they aren't just a heat explosion in your mouth, it actually has a unique fruity taste to it too. Some day I might have enough guts to try those thai chilies out. haha.

I have a thai cookbook and it says several times throughout the cookbook to use green chilies (for a green curry) or it will ask for red chilies (in red curries or other recipes).

What chilies are they talking about? When I go to my local farmer's market they have fresh green peppers but none that are labeled "Green chilies". They have Pablano, Serrano, Jalapeno, Hot Long Finger Peppers ( all of these are green colored chilies).

I made a recipe for a green curry and I used "Pablano" chilies for the "green chilies" it was asking for. I know Pablanos are mild for peppers, I'm not sure if that's what the recipe wanted since it was implying that the dish would be hot. I've always been confused about this but didn't remember to ask anyone.

Your help is greatly appreciated!

Thanks for the tips. You are correct these are more east Asian ingredients. I've seen A LOT of Thai recipes that include these ingredients. They seem to be the staple of their cooking. I might have to take a trip to Philly because at this point I think its impossible to find these ingredients in Delaware.

I called the one on Old Capital trail road.

I called up an Indian store called "Apna Bazaar" in Delaware. They claim to be the best India grocery store in Delaware. They've never heard of Galangal and Kaffir Lime Leaves. haha.

My search continues. I do see that I could purchase these online. I guess that's my last option. It is SOOOO expensive online. Like $15 an ounce for Kaffir Lime Leaves. You would think you were buying some sort of drug or something.

EDIT: I also called up Yong’s Oriental Food Mart and Wang’s Oriental Food Store. They said no to the Kaffir Lime Leaves but Wang's Oriental Store said that they had frozen Galangal. But that's after they didn't understand what Galangal was and I said: "Its sort of like Ginger". So it could be just frozen Ginger. :(

I want to make an authentic Beef Rendang. I need Kaffir Lime Leaves and Galangal. I can get everything at Newark Famer's Market for the recipe BUT those two items. Any ideas where I could get these important ingredients?
