yes concept is good ... food needs perfection ,it is indeed art ,i would suggest the following

i)tour india ,especially with the founders ,explore simple flavors on streets
ii)research more spices
iii) could GOAT be also added as option besides LAMB?
IV)why not see DRDO developed automated machine (to make dosas for indian navy) ,perhaps at some point of time you could add DOSA besides burrito ?

keep improving ,needs lots of perfection you are on right track so far ,you should do well ..... in the long run ,actually i dreamed of the same in aust but did not do it .... good you guys did in usa ....keep the patience plus passion ...eventually it will take off ,it is important to build quality ,service and trust ,business will follow suite
