Thanks! I haven't been browning in the pot, since it hasn't been possible in my light Revereware pot - but I do use the 5.5 L "dutch oven" for this (browning, then adding liquid) without the benefit of the stockpot-sized volume. It'd be nice to do it all in one.

Tonight I made a turkey tetrazzini to use up all the xmas leftovers, and ingredients spent a long time in the "dutch oven" (seems more like a rondeau?) before being mixed and baked. It would have been great to have the extra size that a larger stockpot would offer here.

Thanks, am47. You're right that the choice of induction is not up for debate at this stage. :) Just the choice of pots!

I'm pretty set on the Atlantis saucepans but I'm still wondering if the Atlantis stockpot is the right choice (it's eye-wateringly expensive) or if the Apollo, Demeyere Resto, or another line will do most of what I want without too much functional compromise.

Awesome to hear your thoughts on this, Claus. If I had a million dollars to spend on the kitchen, I would think about having both gas and induction, in some amazing Gaggenau setup. However, I feel strongly that full induction is the right choice for this kitchen at this stage.

It's interesting to see that a couple of you have commented "don't go full induction" which doesn't help answer my main question about what saucepans and stockpot make best sense for this full induction setup.

I've tried out the Atlantis stockpots and they are definitely heavy! They heat well. I agree that a disc stockpot will likely be the best option. Thanks!

Thanks. I feel strongly that induction is the right choice for my new kitchen. With that in mind, I'm keen to make the best choice I can about the cookware.

I appreciate your recommendation! It looks like getting a hold of Falk here is difficult. I'll investigate.

 

I'm replacing a gas stove with an induction cooktop in a couple of months, and have several cookware pieces to replace now. I'm interested only in stainless steel and just need saucepans and a stockpot. Tri-ply or clad sound like good choices, and I'm ready to invest in high quality items. I live in New Zealand, where I cannot access All-Clad or Calphalon at all, and I'm unwilling to wait months and pay large shipping costs to order these from overseas. Local stores have the Le Creuset tri-ply and Demeyere.

Currently I have a Revereware set including 3 qt and 4 qt saucepans and a 6 qt stockpot; these are my daily drivers, particularly the 4 qt saucepan especially, when cooking rice or vegetables for family dinners). I also have a larger ~8 L stockpot for preserving etc which will eventually need replacement. I could replace both of these stockpots with a new 8 L vessel. I also have a SS "dutch oven" 5.25 L which is the main driver for risottos and similar dishes - thankfully that one will work on the new cooktop!

The smaller stockpot is mainly used for boiling water for pasta/veggies, and the occasional soup or very large off-heat mixing task (Christmas cake). The larger stockpot gets used mostly for the annual jams, jellies, chutneys.

I'm trying to let the new saucepan choice inform the new stockpot choice. I've picked up a set of Le Creuset tri-ply standard saucepans (not the signature ones) but not opened the set yet, so I could swap it for the Signature versions or return and spend on Demeyere instead. I'm really tempted to get a couple of Atlantis saucepans (2.2 L, 3 L). In the saucepan format they don't seem to come larger than the 3 L version? Demeyere Apollo is also locally available but after doing a lot of reading on this site, I think I'd rather have the Atlantis. :)

The 8 L Atlantis stockpot looks like the right combination of construction and volume for what I would regularly use. Is it overkill to get such a high-quality item just for use as a stockpot? Would I be better off spending less on a stockpot and more on the saucepans?

One day I might need to replace a skillet or saute pan but for the moment that's out of scope, since the ones I have will work for now.

A friend of mine is making salsas for a birthday bash, and needs some fresh chiles (mostly jalapenos and habaneros). My friend and I live in Auckland. I know we can get some canned/jarred chiles online from Mexifoods, or from Mexican Specialties in Ellerslie. Does anyone know where I could source some fresh chiles in Auckland or from someplace that would ship them to me within the next week?

I'm laying in a stock of seeds and planning to plant some in my garden this spring, so hopefully this won't be a problem in the future.

Hello there, ideabaker! I'm another American expat with a hankering for Mexican food. I won't comment about the kiwi eating habits as I think other posters have hit the right points here.

I discovered Mexican Specialties in Ellerslie today, and I was really impressed by their food and their selection of groceries. I bought Maseca masa flour, corn husks, and several cans of chiles for an upcoming tamale project. The spicy shrimp taco was an excellent lunch choice. Please give them a try on your next time through Auckland.

I did a brief survey today of the NZ online Mexican grocery sites, and I think that Mexifoods has the best combination of selection and price. I'll be ordering a few things from them ASAP, including dried chiles which seem to be difficult to find elsewhere. Mexifoods has canned black beans for about $4/can, less than at Huckleberry Farms. Mexican Specialties had them too, but I didn't notice how much they were.

The store in Newmarket another poster referred to was Pepperama, which later moved to Boston Road just down the street from Sabato. Pepperama is long gone. Peppers was a similar store in the Royal Oak mall, but it's gone too. Besides Mexican Specialties, I haven't found any other stores in Auckland which carry grocery products. These stores don't seem to have a long lifespan!

I'm an American expat and I live in Mt Albert, Auckland. We are lucky in this part of town to have Muzza's Pies handy. It's a fabulous pie shop open every day except Sunday, and they sell out FAST. The steak pies are the best I've ever tried - no gristle, no fat, no jelly, just chunks of steak in a rich gravy. Do not go past this place.
