Zuni Foie Gras Terrine results- follow-up

Well, we are still alive! After my last post on the 27th we re-sealed the terrine in fat and let it cure for a while (nearly two weeks, which is what Zuni says is the max). Cracked it open Saturday and it is absolutely delicious!

So, I just had some a minute ago, as there is about two inches left, topped off with the fat. It is still good, but I know it can't last forever, especially once it is opened. There are only two of us and we can only comfortably consume so much fg per day. Friends who were invited to share have not materialized. Should we suck it up and gorge on it all this evening? Or can I keep it in a sealed container in the refrigerator a couple more days? The only reason that I think it might keep is that is is basically fat, like butter.

How perishable is unsealed foie gras terrine? Several web searches have not produced any results.
