Zuni Cafe sorbet approach (more on this...)

In the posts below about the Zuni Cafe Cookbook and sorbet, there's no mention of an interesting note J. Rodgers makes-- she says she cooks part of the sorbet in order to create inverse sugars (and thus a less icy end product). Anyone experimented with this?
