Had dinner at the above captioned restaurant yesterday night. One of our party pre-ordered ( 24 hrs advanced notice ) a plate of ' Crispy/crunchy fried fish skin coated with salted duck egg yolk '. Very well executed and delicious.
However, IMO, the dish could be further elevated by making it a touch sweeter and adding a touch of chili spiciness to the coating....as per the best selling, Singapore Irvin's packaged version.
Another tasty and seldom seen dish worthy of mentioning was a ' Deep fry Yellow Fin Grouper fillet with honey, black pepper glaze '.....An equally delicious variation of the popular oyster option. The sweet and slightly spicy, crunchy crisp cocoon encasing a piece of moist and delicately sweet fish nugget.
