sorry for the delay in posting.. I think this may be adapted from old joy of cooking... but my fam has made it our own.
3 cups flour
4 tsp baking powder
1 tsp salt
1/2 tsp baking soda
lots of fresh ground pepper... sometimes I add cayenne too
1 cup grated zucchini
1 cup sharp cheddar (or gruyere works too)
1/3 cup chopped green onions
3 tbsp parsley or other herb of choice (dill is nice)
1 cu buttermilk
4 tbsp melted butter
mix dry w/ cheese, herbs, & zucchini
mix wet, combine quickly until just moistened... s/b like biscuit dough
bake at 350 for 55 to 60 mins for loaf or 25-30 mins for muffins.
this recipe is really flexible... I like to get creative w/ cheese and herbs. eat while hot, is best or toast leftovers. doesn't keep more than two or three days.
