There's a blurb at epicurious.com today about the NY-style deli at Steve Wynn's new casino, called ZoZacracker. The chef is John Regan and he and Wynn wanted authentic NY-style deli food, all made on-site. Wynn brought in a consulting chef and the two did a NY deli crawl, including a visit to Chef's Delight in Brooklyn, the pastrami producer for Katz's. Sure enough, hot pastrami is on the menu, but do they get their pastrami from Chef's Delight? Nope, the get it from a deli in L.A. Ahha, you say, the meat will be from Langer's, said by some to be the best pastrami in the country, surpassing even Katz's. Wrong again, the meat comes from Canter's of all places, said by many to have inferior pastrami. Go figure.
