Accidentally created this cabbage dish tonight, to rave reviews. Here's hoping someone else tries and loves it.
I took one regular head of green cabbage, quartered it, then cut the quarters in half. I didn't remove the core because I wanted the wedges to stay together.
In some hot olive oil, I browned the wedges on each side, adding salt and pepper as they cooked. I covered briefly so they'd also steam. When the wedges were brown on both flat sides, I turned them onto their backs to brown too.
At that point, I tasted a browned leaf and it tasted strangely like.... BEER! Since I happened to have a beer open at the same time, I added about 2 tablespoons from my bottle (Snowcap ale) to deglaze the pan. Also added a knob of butter -- probably 1 - 2 tablespoons -- and about a teaspoon of caraway seeds.
I let the beer cook off and the sauce thicken up a bit, then added a splash of red wine vinegar.
Served at room temperature. It was soooooooo yummy. The cabbage haters liked it too.
