Yum Yum Fish!

I tried a new method of cooking fish last night. It was so easy and the results were so delicious that I wanted to share it with this board. It's certainly not rocket science, but I had never cooked fish this way before.

Whole smallish fish, cleaned and scaled (I used tilapia, but I think the method would work equally well with striped bass or trout)
Red onions
Fresh rosemary
Fresh thyme
Salt and pepper

Preheat the oven to 450 degrees F.

Oil a pan that will accommodate the fish loosely.

Slice enough red onions about 3/4 inch thick to serve as a bed for the fish. Slice enough thinly to stuff a few slices into each fish.

Slice enough lemons thinly to stuff a few slices into each fish.

Peel one clove of garlic per fish.

Make a bed of thick red onion slices on the pan. The bed should be large enough to accommodate the fish.

Season the inside of each fish with salt and pepper and then stuff one whole garlic clove, lemon slices, red onion slices, rosemary, and thyme into each cavity.

Salt and pepper the outsides of the fish and lay them on the bed of thick red onion slices.

Place in the oven and cook until done. (My tilapia were just under 2 lbs a piece including the heads, and they were done in about 25 minutes.)
