Looking for Yuba/tofu skin recipes!

There used to be a great Chinese restaurant in our neighborhood that served an amazing dish with tofu skin/yuba. I ordered it every time I was there. Of course Mr. Yang would not share his recipe. One day they were gone. Just like that. I went to our Asian food market and bought my own yuba. (Dry) every size and shape they had. I can't make it. The yuba was pieces maybe 1 1/2" long rolled up quite tight. Not fried but they stayed rolled and looked like meat. He served with stir fried vegetables and rice. The whole meal was in sort of the kind of light sauce but not as light as light sauce dish usually found at Chinese restaurants. The yuba was sooo good! I would be so happy to receive your favorite recipes! Thank you in advance.
