Yang Chow slippery shrimp?

I realize this is heresy but I cannot understand the enthusiasm over Yang Chow slippery shrimp, which is basically cornstarch-tossed shrimp, deep-fried. Their sauteed shrimp (cornstarch-tossed, sauteed) could more plausibly be described as slippery, but it's still a stretch, and to what end? Maybe it's just me but 'slippery' doesn't connote anything especially desirable so if it isn't accurate what's the point? Sometimes I want deep fried or sauteed shrimp-- sometimes I want egg foo young (actually, I love egg foo young and would love to know who does it well)--but 'slippery shrimp' is to me both a misnomer and a pretty average dish.
