Yamakasa and Sushi Ryo omakase

Hi, you all:

Fellow hounds have posted that omakase at these places need to be requested with specific chefs.

Do you all think that if the fish is fresh, would there be a difference between sushi chefs at these joints?

Don't they just cut the fish and put it on the rice?
