yakitori in hokkaido

i'll be going to hokkaido (sapporo, hakodate, lake toya) in january and have a question about the selection at yakitori restaurants. are neck (seseri), diaphram (harami), and oyster muscle (sori) typically found in all yakitori restaurants, or are these considered specialty items?

if these are uncommon items, can anyone recommend a particular restaurant where i can find these? thanks in advance.
