What to look for with Xiao long bao ?Melanie, Gary, Yimster, anyone??

I don't have a great deal of experience with China's Eastern cuisine so Im not sure what to look for when choosing Xiao Long Bao. I only know what I dont like in my dim sum and steamed dumplings generally and that is: ingredients that are too old, falling apart or bao which arent juicy enough or seasoned sufficiently. I am particularly interested to know your opinions of Lao Shanghai and Da Shanghai as I have gone to both on a myriad of occasions and have not been impressed with Xiao Long Bao at either place: they tend to fall into the too old and sloppy category. The only thing I can think of is that I have never been to these restaurants on a weekend and maybe this is where I am lucking out. Your advice would be appreciated.Also I would appreciate your recommendations on other dishes.
