need help with where I'm going wrong on a rib recipe

Okay, so I had ribs at a friends house and I really liked how they came out. He told me how to make them, but he lives far and don't want to bug him as I have bugged him enough for cooking tips over the years so I figured I would ask here.

The recipe as he gave it to sounds pretty simple.

Take your rack of ribs, season them with smouldering smoked Applewood seasoning ( http://www.clubhouse.ca/en-ca/product... )

Get a over pan, and line bottom of pan with with water. Cover top of pan with tinfoil to keep steam in.

-put in over for 1 hour about at 350
-turn of oven and let sit for 15 minutes
-apply second coat of seasoning
-put on your gas grill at low hear for 15-30 minutes on indirect heat.

So here is what I'm finding happens when I do this...

When I take the ribs out of oven, they look cooked. They are pulled away from the bone, and some when I grab them with tongs, even a bone my come off.

Then put them on grill on low heat like told.

However, what I'm finding is the ribs are extremely fatty and greasy. Today they also felt a little tough.

Can anyone tell me what I'm doing wrong?

Any help would be greatly appreciated.
