what went wrong?

I made a zucchini bread tonight that I've made so many times before. After an hour of baking I took it out & it looked great. I removed it from the pan to cool & noticed- the ENTIRE middle was still liquidy batter, but unsalvagable as it then caved. how could the middle have not cooked at all- it always takes an hour? Any thoughts?
