My brother told me that he has gone there at lunch, sat at the bar, and asked the chef to give him whatever he thinks is great that day. We ate there today and everything the chef gave was delicious and unique.
The chef gave us tempura roll topped with a sashimi salad of mixed fish in a sauce, "salmon toro" sushi seared with a blow torch and seasoned beautifully, smashed tuna on a plate (with sesame oil, chunks of avocado, sprouts, and perfect seasonings), and some delicious toro and salmon sushi with nice shredded veggies on top.
I'm talking about the Matuba in Bethesda. I ate at Makoto a few weeks ago and I thought it was the best Japanese food I have ever had. This was almost as good, and in some ways as good... but for a hell of a lot less money!
