World Peace Cookies- variations?

My husband spied this recipe yesterday in our Dorie Greenspan book and asked me to make them(he's nuts for salt in desserts)

I made some today and we just had a couple with our evening espresso.

Here's the thing...I loved this cookie from a texture and conceptual aspect. I I am not a chocoholic however. I would love to make something like this without the chocolate?

Has anyone played with the recipe and made any variations? I'm thinking I'd like something with nuts in it(maybe with almond or hazelnut flour?) Or maybe a lemon version? Or something spicy and gingery? or?

Just wondering...I'll play with it in coming weeks and see what happens myself. But if you've already done this experiment I'd love to hear about it!
