Working with puff pastry for the first time - help!

Quick post work and workout meal (not the healthiest, but a 'treat')

I'm allowing the PP to come to room temperature for ~40 minutes while I defrost Mahi-Mahi fillets and heat up some frozen cooked mushrooms with lemon, butter, and onions.

My question is what process should I follow?

1. Season fillets > top with mushroom mixture > loosely cover with PP > brush with egg wash > bake at 400 degree for 15 to 20 minutes.

2. Season fillets > loosely cover with PP > brush with egg wash > bake at 400 degree for 15 to 20 minutes > serve mushroom mixture on top of baked shell.

3. Season fillets > top with mushroom mixture > entirely wrap with PP > brush with egg wash > bake at 400 degree for 15 to 20 minutes.

4. Season fillets > entirely wrap with PP > brush with egg wash > bake at 400 degree for 15 to 20 minutes > serve mushroom mixture on top of baked shell.

5. Something else, like brush PP with melted butter.

For seasonings either thyme and SnP or cajun seasonings. Also I plan to serve with a wee bit of hummus and freshly chopped cilantro from the garden (gotta love AZ weather).
