working with puff pastry

I am having a large 50's themed party next month, with as much 50's-type food as I can make. I want to make pigs-in-a-blanket with frozen puff pastry. My question is can I roll out the thawed dough, assemble them, and refreeze them until the morning of the party? As the party is being held in a private club, and I am having a lot of guests from out of town staying in my home, I'm looking for the best shortcuts that I can do before my guests arrive. I would like to have the extra time to enjoy my house party since I only get to see these people every few years! Also, I am completely re-decorating the second floor of my house for my guests, including re-painting everything. There is so much to do, and very little time!
