Caterers set it up hot in one of those large electric roasters at noon. it was set to 300 degrees and the meat was sliced and sat in gravy.. I worked 6pm to midnight. 11pm I noticed one tray was empty, but one was full. wrapped it up in foil and put it in the fridge. I quickly brought it home and chilled tI overnight. it was sitting in hot gravy when I wrapped it..
