Recently I purchased a cast iron smoker box and a variety of wood chips.
Being a grilling newbie, I would like some clues as to how to prepare the food before I put it on the grill with the smoker box. I’ve read the instructions how to use the wood chips and the smoker box, but what do I do with the food? Do I prepare the meat as I would if I weren’t smoking it, as in seasoning and marinating? Or will seasoning/marinating be too overpowering with the smoke?
If it matters, I will only be grilling small quantities of meat and my grill is a small Weber charcoal One Touch kettle.
