Wonton "hankies"

On today's Essential Pepin, he covered a seafood stew with a sheet made from two wontons brushed with water, pressed together enclosing a few arugula leaves, then rolled out to half again their size before boiling. The cooked "handkerchiefs" were about 7" square.

Would using an egg wash instead of water to glue the two sheets together a) work, and b) make the wontons taste like egg noodles? If it works, should it be just a beaten egg, or just yolk, and/or diluted with water?
