wonton downhill slide?

I've noticed here in Marin, during the past two or three years, that wonton soup is becoming less satisfying and reliable. The wontons are getting more lopsided and squished-looking, and tasting more doughy and pasty. What I think is happening is restaurants are buying big cartons of them from the factory, and by the time they are served they are deformed and several days old.

Any info on this?
