So I just bought a wok to get into stir frying, which is something I've not done before. But every recipe for stir fry says to use on high heat -- the problem is the directions for the wok I bought says "Kitchen use: Medium or low heat only".... So.... what the heck?? I looked up my other pan (a saute pan) and it says the same thing!
Why would a wok say not to use high heat? Can you stir fry on medium heat?
