Winter squash varieties? Best sub for butternut?

In my CSA we've been getting a variety of other kinds, but I never know which ones are the best to use in place of butternut. Right now I have a carnival squash, an acorn squash, and a golden nugget squash. The acorn is the only one I'm familiar with and I'm sure I'll figure out a way to use that one up on its own. But as for the golden nugget and carnival -- are they okay to sub in place of butternut? Or if not, what other uses are good for these particular varieties?
