"• Research in the past few years has challenged widely held beliefs about the composition and evolution of tannins in wine.

• Research reported at this June's ASEV meetings cast doubt on the notion that seed tannins are harsher than skin tannins, and indicated that total tannin levels in older wines remain constant, even if the forms change.

• Other research has shown that longer tannin polymers are more astringent than shorter ones, and that tannin development is not a linear trend toward longer chains but a complex process. "
