We are hosting a multi course wine pairing dinner and I am not sure of the best wine to serve with lobster bisque (first course). Chardonnay seems safe but I'd like to do something more interesting. Perhaps a Pouilly-Fuisse, Chablis or a sparkling such as Cava? Next courses are a citrus avocado sea bass with a white Bordeaux, Salad with dried cherries with red burgundy, filet with port reduction with Napa Cab or Portuguese Douro. Would appreciate suggestions. Thank you!
