Wine pairing help, please?

I am preparing a 4 course meal for my foodie Uncle's birthday, and would love pairing recommendations! I am, unfortunately, not able to spend a fortune, nor do the 4 guests really drink wine all that much (they would probably be happy with a box of something pink, but I refuse). So this is really kind of an opportunity to open their eyes to what well paired wine can do to a menu.

First course: seared sea scallop with fennel/radicchio slaw in a kumquat/tarragon vinagrette
(I was thinking gruner veltliner, reisling, or gewurtz here...maybe Sav Blanc? Two of the guests love sweet wine, so if I can find one that works, it would be great)
Second: sweet potato soup with orange creme frech and a touch of chipotle
(Sancerre? A french style Chard?)
Third: Arctic char (or salmon if I can't find it) with wasabi and soy/honey sauces, asian quinoa and sugar snap peas (I would like to do red here if possible, what works with asian flavours?)
Fourth: Mustard rubbed pork tenderloin with apricot chutney, mashed potatoes and grilled asparagus. (Something spicy, I think to offset the sweet chutney...a Zin? Or a peppery Pinot Noir?)

I will be doing a cheese course with port, if I can afford it, and then dessert with coffee. I would love all the help I can get, as my wine knowledge doesn't go too far past CA.
