I arranged to pick it up today because the website said it would be fresh. I guess they meant fresh as in "not rotten" rather than "not frozen."
I'd already mixed up salt and seasonings for a dry brine, and I rubbed those on my turkey anyway, then sealed it in a plastic cooking bag and stuck it in the fridge. I'll open the bag tomorrow and let the skin dry out (and get the bag of goodies out, if possible.) Do you think this will work? It's just under 13 lbs.
