Does anyone have a recipe for Willa Jean's cornbread ?
A friend from out of town is asking for it.

Without a very specific ingredient, Poirier's Pure Cane Syrup you won't be able to duplicate the Willa Jean version. The article does into some detail about the difference between Poirier's brand and Steen's brand and the cult status of Poirier's among NO chefs.

Having shared depressing information, there is a recipe appearing on the internet that bears Willa Jean's name. However, the list of ingredients doesn't include pure cane syrup -- of any brand -- and you'll find the words "Adapted from a recipe by Kelly Field, chef and partner at Willa Jean Restaurant in New Orleans." Possibly, these may be sufficiently delicious for your friend, but they're not the real deal.
