If all goes well, we will have some nice fillets. I'm going to experiment freezing a few fillets using a couple of dif. methods and will eventually report back on those results. Will see how that goes...
In the meantime, I'm interested in gathering any interesting preparations for salmon. Any ideas or recipes appreciated.
I just checked out the Babbo cookbook again (I may have to buy this since rereading reminded me of what a great book it is!) and was pleased that Mario includes 3 recipes for wild salmon. One method cooks fillets on a cedar plank in the oven at 475F, w/ 20 min. to preheat the plank like you would a pizza stone. No pre-soaking of the plank is called for. Has anyone done this before in a home oven at such high heat w/ no pre-soaking of the wood? I'm a little scared that the board might burn or catch fire. Assume you can reuse the board? Thoughts and tips welcomed!
