I always make a turkey on the weekend after Thanksgiving if we have not been at home so we can have sufficient leftovers and a good turkey soup.
since the official dinner we will attend will feature bread stuffing and dressing, I thought I'd do a wild rice stuffing. I am intrigued by this recipe from Saveur
as I like the idea of chicken livers and wild rice together. It also has egg yolks in it, I guess as a binder.
I think that when I have had wild rice stuffed birds before there has been no binder, and I think this sounds appealing, but am wondering about whether any of you have experience with this approach, and whether you think it is a good idea.
This is not a high stakes meal, so a good time to experiment, btw.
